Default 1981 Mustang 2.3 intake and carb questions

i was looking up carbs and intake manifolds and i was wondering if the Holley model 4160 4bbl 390cfm carb would be overkill or if i should just go with the 2bbl 350 cfm carb.... and i was also wondering if i should go with a cast iron holley manifold or the aluminum arca manifold off of esslingerengineering.com

i was doing some thinking and would it be a good idea to take the stock carb off another motor... cuz i could go to a u-pull-it and get an old carb of a ford truck or something and get it cheaper.... but is it worth it?

The stock one is a 5200 motorcraft. You can always use a bigger carb for more hp. or go with the offy 4bbl. They arent large 4bbls but its better than a 2bbl. hats my plan anyway. that and headers.
