Default LX lowering ideas

Can you use the stock suspension off the GT to lower the Lx?

no! the weight difference will actually make the car sit the same height if you get the lowering springs for a 5.0.. Eibach makes some lowering springs for the 2.3, check them out

My lowering plan consists of cutting coils off the stock springs. I'm really not after performance handling, just wanting it to sit a little lower.

Well, how "performance" is a 4 cyl vert??? Not very. If I don't like it, stock 4 cyl springs are everywhere, so I can always switch back.

True, but you can build a 2.3 for performance.

This is the cheapest I've seen them:
Unlimited Performance Racing Products On-Line - UPR Pro Kit Mustang Lowering Springs by Eibach 79-04 4cyl. & V6

I got mine here a while ago, but I still haven't installed them.

Power is most definitely possible. People have not been using this motor for dirt track racing for the past 20 years because of fuel milage.
