Check your TPS (Throttle Position Sensor, I think there's a detailed thread in the 5.0 tech forum describing how, and if you've got the Chilton's manual I believe it's covered there as well.) and make sure your pre-heater pipe (if yours has one, I know they did all the way to '88, not sure past that) is connected and doesn't have any holes in it. Both of these will cause weird hesitation/take-off conditions, especially in cold weather when the engine isn't fully warmed up.
