Default New help with cam & carb specs. 1985 2.3L

Okay I race demolition derbies (going from hard brake to full throttle whitle shifting auto) my motor is a 2.3L bored .30 over, and decked, everything is new except crank, my cam specs are .285 @ .479 intake and exhaust....i run a holley 350cfm 2 barrel..
1. Motor loads up extremely bad unless you keep it half to full throttle, it doesn't like small amounts of fuel. So i'm wanting to change to a progressive 5200 holley (280 CFM) or 32/36 (325CFM) Weber. Will that help the problem?

2. Knowing the cam numbers I have no idea what the rpm range is, do you think this cam is a high reving cam???

is it loading with fuel because of the bigger carb? you can get a jet kit, and re jet the carb to flow less.
If it is stumbling,i think that would be caused by to much fuel.
How do the plugs read? rich or lean?
