You didn't mention aything about cams that I read
Those cams (490/.480 lift 222/235 duration @50 115.5 LSA) should net you 9.8% so your overall total gain should be between 42 and 57hp which is awful close to what STL got and that could all be down to cam timing, tune, dyo used, etc.
If you are looking for big power and don't mind a lopey idle the stage III cams (.540/.561 lift 242/250 duration @50 112 LSA)
with lock outs set up correctly can get you up to a 20.9%hp gain. That would put your head/cam mod between 75 and 90hp.
The heads are a big expense when you consider what they cost per hp though.
The cams are a bargain though. Of course they work together better with the heads than by themselves though. I think the heads are a bit overpriced anyway. With a little bowl work, unshrouding the valves, a good valve job (with quality valves) and some port matching, skim the heads a few thou to get the squeeze back and blending at the seats they will probably work as good as any CNC head. A FI motor would work better with the CNC stuff though. The OEM heads have a great design. They may be the best production head Ford has ever made. Gains are hard to find.
