The easiest way to bleed the clutch is to raise the front drivers side of the car with a jack, open the brake reservoir and pump the clutch. The other way is with a pump, but I can't remember those steps, so I'll let someone else chime in on that.

what are we looking to adjust? pedal height; grab height; throw ratio?
the play at the top is perfect and consistant with the hydraulics.
bleeding won't change anything unless something's wrong.
Just curious, does anybody make a different ratio slave cylinder for these cars? I understand that the master cylinder works both brakes and clutch. That would be an expensive change. Yes, I feel like the clutch pedal moves a full foot, or more, sometimes. I think reducing the travel by about 1/4 would be worth it, but would increase the pedal effort some.

You think changing the master cylinder would be expensive, try paying to have the trans pulled to change just a slave cylinder.
I just figured that it was an external cylinder, acting on a lever to the throwout bearing. Didn't realize that it was internal. Haven't been under there to look around much, except to change the oil.

Even the 2+ is pretty much instantaneous. Can't imagine how the 3+ feels
