Asked and answered previously in another AFM thread:

I'm thinking of replacing my OEM black shift knob with a silver knob and my question is: How do you remove the top of the boot from the bottom of the knob? I know the knob unscrews (by turning counterclockwise) but does the boot just pop down?

Yes. It has a thick rubber O-ring in the top of the boot. Just work it down and it will slip off the groove around the base of the OEM knob.
