The stock headers are pretty decent. Aftermarket's aren't that much better. To each their own though. I personally switched mine out and can only really tell in higher rpms.
I wouldn't buy the kit for the dual. You'll get a better sound if you get an h pipe and buy the gt set of macs.
As for the cats... I hear a lot of people saying that they regret messing with the stocks. They tone gets real raspy. But if you like that I'd go with it.
I'd go with a tune and CAI if you can fit it in.
The set up you have up there should work though. I don't see why it wouldn't.
Honestly, all you need is the dual exhaust kit. I just recently got it installed, and they sound perfect for a Y-Y pipe conversion if you're looking for a deep, throaty exhaust setup. I also agree with Saleen13. If you have the money, go get a custom H pipe made and skip the cats ( I just don't have the money right now to get one made, but it's going to be my next modification by this summer along with a custom tune and a CAI). A friend of mine replaced his cats about a month ago and it is true that it adds a raspy tone and doesn't really attract the right attention . I chose to skip aftermarket headers, because after researching about it and speaking to different performance shops around my area, it doesn't make much of a difference with sound, but its all about preference. Good luck with the exhaust setup, you wont be dissapointed!

For the bumper question, just allow whoever is installing your exhaust setup cut it if you believe they are expierenced enough. I know that pypes has a template on their site, but I actually had a mustang performance shop 2 min. away from my house cut it and it saved me around $700 because most GT take off bumpers need to be painted. Once again, if you have the $$$ the GT take off bumper looks great, but so does that exhaust kit with the rear bumper cut because it has large chrome polished tips that stick out. I'm actually glad that I had the rear bumper cut.
if you want headers for looks, check out the classifieds ( hint the dollar sign next to my post)
or look on ebay. i got a set off there for $105. they look awsome! i have another set in classifieds

I got my exhaust kit from Ninosport. They sell driver side hangers too. The exhaust kit was cheaper than MAC's website and if they are out of stock, they order them from MAC and you still pay the cheaper price. At the time, they had a 5% off promo code but I believe that it's not usuable anymore (If you want to try to use it, type "stimulus" in the promo code box at the last page when ordering). Here's the link for the exhaust kit you're looking to get: MAC SS Dual Cat Back 2005-09 Mustang V6 - TK2625 and heres the link for the driver side hanger: Pypes Exhaust Hanger Kit, 2005+ Mustang V8 & V6 - HFM60K. I didn't call my local ford dealer for hangers, but they might be cheaper. In the end I saved around $65 by going to Ninosport's website.

be sure to hit them welds with hi temp rust resistant paint!
once you weld, you lose ability to prevent rust on that area
