I've been wanting to do this for quite some time now. The problem is I don't want to have too high of expectations for this mod. As of right now I have a dual exhaust set up and some bbk shorty headers.

My plan is to buy a 2011/12 GT, but I need some more power to hold me. I know this is one of the major things to do if you're not going F/I. I just want to know what sort of HP/TQ numbers to expect.

I think some one said he gained 30 at the wheel.
And to answer your question: Yes you should.

Also look at brenspeed or tillman.

I have been running the C&L CAI for the past 2 years with an 89 Octane tune from another distributor. Just changed it up to BamaChips 91 Octane "Torque" tune, difference is amazing. This is the best bang for the buck you can get for the V6.
Other Mods include:
3.73:1 Traction Lok diff
Moto Blue Underdrive Pulley
JBA Axle back exhaust - very nice sound
