I am looking at a 2005 Mustang V6 - it has a GT grille and leather wrapped steering, but cloth seats.
I know some people install GT grilles but the leather steering wheel has got me wondering i.e. what if the previous owner swapped out the steering, didn't install it properly. There's an airbag involved...
Do I have cause for concern? Was a leather wrapped steering available as an individual option for 2005?
I don't think it should be any cause for concern. The leather steering wheel is a nice option. There are aftermarket steering wheels available and they aren't that hard to install. I've had the entire dash in my car out before to paint it and I had to remove the passenger air bag. As long as the bag hasn't deployed you're good to go.

i have cloth seats and a leather wrapped steering wheel oem. ts a 2008 v6 if that helps

we have a 06 V6 premium that came with cloth seats, leather wheel. kinda thinking it came on all the preminums, my 05 deluxe (base model) came with the black plastic wheel.
