I would make sure the sending unit and gauge is good first. It's driven by the crank.
Did the same to my 95GT after the motor swap and forgot to plug in the connector...almost $hit in my pants.

why don't you try taking off one of the valve covers, disconnecting the coil from the distributor and turning the car over? If you see oil coming up then you know it's the guage, the car cannot start in this fashion so now you have isolated the issue, if no oil comes up then you know something is wrong with the pump or pickup...

this sounds like you put in an aftermarket oil pressure gauge? and if so it must be an electric one because a mechanical shows real time and wouldn't move unless it was getting pressure to it....

im with 2005gt though check the sending unit and make sure it is hooked up properly and is clean

unless you want a cool ticking sound, DO NOT RUN THAT CAR ANYMORE UNTIL U HAVE A GOOD OIL PUMP!!! at least take off front cover (major PITA, i know BUT) see if everything is hooked to the oil pump, and if so, it must have gone bad somehow?? not sure how but that doesnt matter, if u dont have a good oil pump then u dont have a good motor... an oil pump is a LOT cheaper than a motor!!!

I know the gears in the pump are weak. It will be a pita to swap the oil pump out. You'll have to remove the front accessories, timing cover, you'll need to put a mark for reference on the chain and sprockets ( I would put one on each of the cam sprockets/chain and one on the crank sproket/chain) remove guides, chains and crank sprocket so you can finally pull the oil pump off.
