That is the sound of double clutching.
The engine sound in the movie during the high speed chase is that of a GT40 not the '68 GT390 Mustang. It was dubbed over. Since the GT40 was a race car at the time, it did not have a synchronized gearbox and needed to be double clutched.

are you sure cause in the last part of the chase it even shows the tail pipes splurge when he shifts..the sound is to accurate with his car and i read for that seen they removed one set of mufflers leaving just the glassbacks for better sound
you only need double clutch when downshifting in an early style transmission (before syncros)... i haven't seen the movie but your description sounds like he is accelerating.

I don't where you got the idea that a GT 40 sound track was dubbed into the movie but that is rediculous. The GT 40 had a fully synchronized transmission and for further proof look closely at the exhaust pipes of McQueens Mustang when he shifts and you can see the exhaust as he taps the gas pedal. Doing that in a non-synchro car would result in grinding that you can't imagine. That particular inovation was a McQueen special and if you ever watch some of races he was in he does that a lot. It's not effective and I suspect that he did that as a habit he picked up somewhere.
just watched it on youtube and man that part when he rams the charger off the cliff and into the gas station is the best part lol its like dieeeeeeeeeeeee

he is just blipping the throttle while upshifting. so when he presses the clutch in he just gives it gas to give it that extra sound.

It's called practice. Remember, Mc Queen was a race driver as well as an actor.
It's not just double clutching. At times there is a lot of "Heel & toeing" going on. That's where you work the gas pedal with your heel while your toe works the brakes and your left foot works the clutch. It makes going into a corner much faster if you can brake and shift at the same time.
To get another look at his driving style, watch the opening scenes of "Le Mans" where he proves a Porche 911 can be driven hard in the rain.
Whether or not its a dubbed GT40, don't think for a minute that a quality studio can't get the soundtrack syncronized to the exhaust on film, especially with Mc Queen directing. All you have to do is listen to the soundtrack in headphones while making the throttle dance to the music with your foot, especially if you are driving slow and then cranking down the film speed with the camera.
It can't be real all the time. How many times did you count them passing the same green VW beetle?
