3.73's - 4.10 are nice gears, I'd lean toward the 3.73's but everyone has their opinion. My car dropped with drag radials and 3.90's being the only mods 14.32 to 13.87, on my other 5.0 the times were slower due to altitude but either way with the swap to 3.73's and nitto drag radials once again, I dropped from a 15.46 to a 14.94. So realistically you can't go wrong with any of the gears from 3.73-4.10 as long as you have the traction to take advantage of them. The 3.55's are the only ones I think wouldn't net too much of a difference on the track, I've never tried them but from other peoples experiences I'd say to just skip them especially since you're not worried about highway rpm's.
