Opinions vary on how much HP a 351 block can handle, most estimates are around 650 or so. Definitely a lot more than a 302 block.

If you go 30 over on the bore to 4.030, and from the stock 3.5 inch to 4.0 inch on the stroke, you will have a 408, which is about as big as you can go without running into other issues, like needing to clearance piston skirts and the like.

If you start with a Dart block you can go bigger on the bore, but now you're talking about some serious money. Of course you'd then be able to handle even more HP, maybe up to 1,000 or so.

They make some great short blocks.

DART Sportsman Block

That's also another option if you'd rather build it from the ground up.

DART makes great blocks, and DSS makes great short blocks.

I'm expecting delivery this week of my 393 short block from CHP.

There are many options on building these stroker engines from buying them complete and ready to run, buying them as short blocks, or just buying the rotating assemblies and building it all yourself. It all depends on what you want, what your tools and capabilities are, and most importantly, how much you can afford to spend. When all is said and done I expect to have about $6k in mine.
