Should i keep using my water pump under drive pulley? Some of my friends say it could be bad, an make my car over heat? I was thinking about buying a new thermostat for 140 degrees or 160 to help insure that I'm not going to over heat. I'm Using an electric fan also.

If it isn't overheating now - I wouldn't worry about it. Changing to a lower temp thermostat really won't make a difference. The undersized pulley reduces water flow - which seems to affect low speed more than cruising. Electric fans, sized properly, can help by cooling the slower flowing water better than the stock clutch fan.
I agree, put a 180 in there. The thermostat doesn't keep the engine that cool, that's when it opens and allows flow. If you get one that's that cold, it'll always be open, acting like it has no thermostat at all and cause it to run hot. The thermostat needs to cycle open and closed to keep the coolant in the radiator long enough for it to cool off.
