Default Switching to carb, can you reuse your EFI fuel pump with the appropriate regulator?
Im thinking about about converting from EFI to carb.

Can I use my EFI fuel pump with a carb fuel regulator?

No, you need to go to a carb application pump. There is no regulator that will reduce the 50+ psi of the stock pump down to the 5-7 psi required for a carb.
