Stud mount offers more adjustability, while pedestal mount are easier to install. A set of stud mounts will require machine work on a stock set of heads, while the pedestal mounts bolt on.
As far as the ratio, stock Ford small block windsors come with 1.6 ratio rockers. Increasing to 1.7 will increase the lift accordingly. However, it also reduces piston to valve clearance, so be careful. If you are looking to purchase a set of rockers, keep in mind what you plan to do in the future. If you get a set of aftermarket heads in the future, then the pedestal mounts might not fit, and the 1.7 ratio might ne too large for the increased valve size.

What year car are they going on? Some Pre-1986 models came with flat top forged TRW pistons that will hit the valves with 1.7 rockers.
