1- When im driving kinda takin it easy say in 2nd or 3rd, then decide to just roll up on the throttle, it feels like I get a giant kick in the rear when I hit 3000rpm, Its a very noticable power boost, is this normal? It doesn't bother me just curious.
2-If I'm goin downa weavy type road, runnin a little hard, and I'm on a left hand bend, goin around 60ish in third,(which is just about 2850 or 2900rpm) it stutters as the road straightens. It stutters hard too, only on lefts, and only in third, if I slow down a touch and downshift its not there. I have no clue what this is.... Any help on this part will be gratly appreciated...

Maybe you have an electrical or ignition problem somwhere, the power boost and stutter could be 2 symptoms of the same thing, check your wiring, plug wires, etc.
sorry this took forever, but the weather has been crap---anyhoo, I went though all the wiring as best I could, and couldn't find any loose connections or frayed wires..A buddy said to try plugs, at least for the below 3k lack of power,-----what plugs do you guys recommend, and what is the gap supposed to be??

Do a resistance check on your plug wires. I wish I could tell you what is normal resistance for plug wires, but I'm not sure. I want to say anything over 40 ohms or so could be a problem but I'm not sure. The plug electrodes should NOT have a black buildup nor should they look wet at all. If it has either, then I would suspect a misfire problem with that particular cylinder. On my 83, the plug gap spec is .050", I'm not sure what it is for the higher compression EFI engines though.
