It could still be an exhaust leak. You can tighten till your blue in the balls but if the gasket is blown it won't help.

It is just really hard to describe a noise. You need to get some other people to listen to it. When I have a noise that I am trying to isolate, I have a section of garden hose about 3 feet long. I put one end to my ear and probe with the other end. You will here it when you are close to the source.

does it soundl like pinging? as in: not enough fuel octane, not enough fuel burning, timing advanced too far, timing chain too slack, something along those lines?
a tap tap could also be in the top end... valves, lifters etc... two possible cheap fixes.. run a fuel injector cleaner that cleans carbon off of valves, run lucas oil treatment in and if it quiets up its in the valvetrain.

i see you put a 76 mm MAF in there without changing injectors , perhaps could be inproper fuel/air ratio causing problems in various cylinders when the engine is working/pulling. the stock MAF is good up to 350 HP, why'd you replace it with such a bulky one? That wuold be my guess as to your noise. sounds like detonation being caused. or in the worst case, a rod.

I bought a 94gt about 3 months ago. I thought it had a header leak. But when I pulled off the altenator there was the problem. A bolt was missing that screwed into the head. It went thru the altenator into the head. Its some kind of smog hole or something. But it was letting exhaust out of the front of the head.Blowing it into the back of the altenator. Pluged it and the problem was fixed. It made a sound like what your talking about. Good luck
