As for changing things. So many things to consider:
1. - Is the car bone stock original matching numbers etc.
2. - Has the car ever been hit and repaired. How well.
3. - Can you bring the car back to showroom condition and is that what you want to do?
For many people just having a classic is a great hobby and one that you shouldn't loose much money on if you don't spend like crazy.
As far as putting on rims etc. All these things are considered cosmetic changes and don't hurt the value unless you sell it to a museum.
I would suggest keep the parts you remove in case you decide to sell it. These parts may help.
I think you need to decide what you wan to do with the car.
For example if you paint it "Fire Engine Red" and it looks great, it will be appealing to many people that like the color. However a serious collector would not want to buy a car that has been repainted unless it was a special special car.
Another example. - 1970 Mach 1 - showroom condition original might get you $40,000.00 or better. A 70 Mach painted with a nice base-coat clear coat might inly get you $30,000.00. There also are probably fewer people that want or can afford the showroom piece.
What I am trying to explain is the car will only be worth what someone wants to pay for it. As for me, I would change cosmetics such a rims, valve covers etc. and just hang on to the old parts. It is up to you.
