Well it all depends on the condition of the original parts. After you assess that, you can figure out what you need new. It will be different on every car.

Like Jwood70 says it all depends. Depends on the goal (concours or restomod or daily driver). The good thing is that you can practically replace every part in a 65/66 with reproduction parts from dozens of suppliers. Still, you will want to save and reuse as many of the original parts as you can. Amazing what a little elbow grease, some fine steel wool and a little chrome polish can do on interior parts. NOS parts are available as well but be prepared to pay.

That's a big question, if you already have a car or are looking at cars you may want to order some mustang catalogs, most are free. Go to their websites, like Mustangs Plus, Mustangs Unlimited, National Parts Depot, Virginia Classic Mustangs, etc. and order a few catalogs. When you get them flip through them front to back and make note of what parts are affordable to replace and which are really expensive. This will give you a better idea of what you're getting into when you look at cars that may need engine work vs. a new interior. Paint and body work isn't cheap so consider that as a biggie if it's not in good shape.

well you could go to Mustangs Unlimited and get yourself a book for your year. I have a '67 and that book seems like it has enough parts to build a car from scratch.
