Is there a newer rack and pinion unit that will work from a later model Ford in my 67 coupe? There are a million pic-a-part yards around here and I was wondering if there was an upgrade that I could use? What about a disk brake set up? Is there a later model I could use for that?

The rack and pinion there is none that will bolt right in.If your willing to make the mounts you could use one then.Disc brakes Only the early mustang 73 the newest or give this site a reading MustangSteve's GRANADA to MUSTANG DISC BRAKE INSTALLATION INFORMATION but if you get used brakes you need to buy new rotors pads rebuild the calipers or replace them and rebuild the hubs.
