i was handed down a '71 mustang after the flood and was wondering how to get started on stripping the insides(seats/rugs) and checking for rust. im trying to restore it the cheapest way possible. would it be cheaper to hire a professional or is this something i can take on myself? any advice would be helpful on how to get started. thanks!

Buy a factory service manual first. That will tell you everything you ever wanted to know about the car. Including how to remove the interior components.

For repair, it depends on what you find. If there's surface rust, you can probably do that yourself. If the panels need to be replaced, they need to be cut and welded. Can you do that? It might be cheaper to spend $200 on a MIG welder than to hire a pro. But sometimes I'v had to pay a pro to fix my mistakes, and that can get expensive.

i'de start with the upholstery. that the seaiest, then remove the seats, the dash and so on. how bad is it? you should put up a few pics at different angles and the inside.

make sure your wearing all the neccissary respritory protection.
