Removing the fan is pretty simple. Look at the center of the fan. You'll see 4 bolts. They are usually pretty tight, and can be tough to break free. Once you get them loose, then remove the belt.
You'll probably have to shorten the bolts before you put them back in. They are a fine thread bolt, so don;t try to replace them with just anything. Off the top of my head, I think they're 5/16". But don't quote me on that, I could be wrong.
To mount the fan, use two long strips of metal, and bolt or weld them into the stock steel shroud. Then mount the fan to those strips. Pretty easy.
Measer the opening on your current fan shroud. You want a fan that will fill up that hole. the more space there is between the outside edge of the fan and the shroud, the more inneficient the fan will be.
I have a Spal fan on both my cars. Working well. The bigger Spal keeps my 427 cool without too much trouble. Get the type that has the tips of the blades connected in a big circle. If it has individual unconnected blades, they have a tendancy to break off and damage the radiator.
I've also used Black Magic in the past with good results.
For wiring, I used a simple thermostat switch from Summit, and a relay. All automatic, don't have to touch anything.
On my track car, I also have an over ride, So I can run the fan even when the temp isn't over the limit.
