There are a lot of factors there, what heads will you use? This is where the ford engines suffer, the stock heads are very restrictive. Will the stroker be a roller motor? You're adding 50+ cubes so of course there's going to be a HP/TQ advantage, it's the additional parts that will decide how much= heads, cam, intake, carb, headers, etc.
I haven't driven both but my stock 200Hp 289 wasn't keeping me happy anymore so I pulled it and had it stroked to 331 and should have it back in within a month I hope. Added AFR 165 heads, cam, etc. to match. Hope to jump from 200hp to 325-350, I know I'll feel that seat of the pants.
I looked at going 347 but with the 289 it was too close to max rod angle for me, it's a DD that'll see some track fun so I didn't need to max out in my mind. Many have gone 347 with 302 based rollers w/o problem due to new piston kits that are improved.
Unless you're pushing the engine for power or using a blower/turbo, etc. the forged parts aren't necessary, cast will hold up fine. Fordged is also a little heavier for all the reciprocating parts.
