Raise your hood,
take a strong piece of nylon rope or flexble wire(you get the idea) and tie it to the front of the spring loop(where it hooks to teh hinge). now prop the hood up first, and pull on your wire or rope and the spring will come right off.

Yes, Silver69 is correct. You just need to pull on the end until you can get the spring off the hinge. They are surprisingly strong springs, so whatever you rig up just be sure you can pull hard on it safely.

OK, you want to transfer the hood hinge springs from your old hinges to the new ones correct?
To get the old ones off, raise the hood and support it firmly with a stick or similar. You will see on the existing springs that the ends of the spring form "hooks" that fit into slots on the hinge. You need to grab hold of the "hook" and pull it out of the slot. I have done this using vice-grip pliers, but you could also use a strong cord, or twist a coat hanger around it. Th point is you need to be able to grip the springs hook firmly and pull it (stretch the coils) enough to get if off the slot in the hinge. One you have the new hinges installed, you just reverse the procedure to put the spring back on.

It's not super easy because the spring are strong, but there is nothing technically difficult either. Good luck.
