You have a lot more in that car than I do and my best so far was 14.9. I don't have gears, a chip, or pullies.
There are a lot of factors, altitude, tires, and track conditions. Also your ability to shift the trans all factor in to the time. That time is a respectable time and if you can do it consistantly and cut a good reaction time you could be deadly bracket racer.
75mm is too big of a throttle body given no internal engine changes. You'll pick up a few tenths and torque by going to a 65mm.
I killed my old 302 build by switching from a 65mm to a 75mm, when I was a little more naive about fuel injection motors. Lost tq and horsepower - went from 13.20's to 13.60's with no other changes than going too big.

Get some drag radials they ought to help you out quite a bit, above all practice your launch. Seat time will get you a faster time alone. Good luck

He has a 96-98 GT (215 HP) you have a 2000 GT (260), you're starting off with alot more than him.

Not dumping on anything you said but I've never heard of a throttle body destroying a motor, I doubt he will pick up anything from going to a smaller throttle body, it's not like a carb where if you throw an 850 on a stock 302 it will just kill it. JMO

Personally I think you biggest two limiting factors right now are your 60' (traction), and your seat time. Your car should easily be a 14.2 car... One of my techs who is our Pro Driver has a '99 Cobra just about bone stock with only 4.10 gears and a tune. He goes 13.2 on street tires with a 2.02 60' and 12.8 on DRs with a 1.6-1.7 60' so that is probably your biggest limiting factor right now.
Practice, practice, practice. Once you get your launch down to where you start getting some consistency than start messing with tire pressure and see what works best, start at 20 psi and work your way down little by little.

Your car sould be able to go much faster. I have a 98 gt 5 speed my last 1/4 mile time was last week. I ran a 14.38 at 96.2 MPH and all i have into my car is a flowmaster exhaust and a 4.10 rear end gear. I plan on doing work this winter to see if i can get into the 13's. Good luck with your times.
