Default what temp thermostat for drag racing

i have a new 89 gt drag car and have a 390 hp crate motor to put in it. i called summit today and ordered some stuff to finish it and the guy told me they didnt recomend running a car without a thermostat. i have been racing an 85 gt and i was pretty sure it didnt have one and i have never checked so i dont know for sure when i warm it up i dont leave the fan and water pump on the whole time or it takes 20 minutes to warm up. when i get back into the pits i only leave the fan and water pump on till it gets down to about 120 and then shut it off and hook the charger up till its time to run again. whats the deal

I see you figured out your problem, but for conversation sake I usually use the top part of the thermostat in my drag car as a restrictor and that works well for me.
