'Carol of the Bells' is my absolute favorite. I like the Eastern European quality that speaks of order and chaos at the same time. Aside from being a great Christmas song, I think it is simply a great piece of music which I find every bit as stirring as Tchaicovsky's 1812 Overture and Wagner's Ride of the Valkyries.
Maybe not so much a song about Christmas so much as a song normally sung at Christmas, but I have always really liked Good King Wenceslas.

The Chipmunk's Christmas Song (Christmas Don't Be Late), not because I really like the song so much as because the part 'all I want's a hula hoop' cracked my dad up so much that he would sing that line, over and over, in a funny (though non-chipmunk like) voice. He'd also repeatedly 'play' Jingle Bells on the car horn when we would go to visit family for Christmas. His childhood was pretty rough, but he always became a big kid at Christmas.
Lately, I've taken to making fun of one line from 'The Christmas Song'. I like to re-interpret the line about 'a turkey and some mistletoe' to be:
And everybody knows, a missile and some turkey toes...
Yeah, I know, but that's just how my mind works. Eventually, I may just re-work the whole darn song, just for grins.
I too have a bad habit of changing words to songs, like Police got my car, Police got my car, Police got my car so now I'm walking
I only one who does this can understand it the sickness lol

Hello. For me, a lot depends on who's doing it. I heard a couple of guys playing The First Noel on classical guitars one time and that might be the most beautiful thing that I've ever heard in my life. They weren't anyone famous, just a couple of guys out on the street corner in the 'artsy' neighborhood here. It brought tears to my eyes. Simple beauty in spots, swelling to a rolling majesty, it was beautiful. I like the way that Johnny Mathis did O Holy Night. Who could NOT like Burl Ives singing Holly, Jolly Christmas. I love the horns in Feliz Navidad by Jose Feliciano. And yes, I will confess to liking that Christmas song about Snoopy and the Red Baron. There are a bunch of truly wonderful classical pieces, like Jesu, Joy of Man's Desiring By Bach, although that one's been a bit overworked at weddings. I could go on and on, but I will spare you.
Carol of the Bells is a good one.
