how does the coolant look??

is the cooling system pressurizing real fast??

overheating in 15 minutes max isn't good.

is anything blocking the rad?? or A/C condensor??

hows the thermostat??

have you done a compression check??

have you done a leak down check??

i'd suggest doing a compression test. in case of a head gasket leak.

is the thermostat installed correctly?? are you getting flow through the radiator??

i'm having the same problem with my 351 also but it will not heat up as fast..i too have a flex fan. i will go back with the stock fan i would have been better off.
you may also have a bad temp gauge.start the car up and take the rad cap off.if the temp rises but the water is not hot then it is the gauge.
