Does anyone know a good shop in or around Mississauga or the GTA, Ontario that can do a decent head gasket replacement for a competitive price?

I would recommend you consider either Joe or Paul DeSilva. Both Joe and Paul now have their own performance shops and both have excellent reputations for the quality of their work.
