Default Nitrous Shot Size Change

How easy and expensive is it to change your shot sizes of nitrous? I read an article of a guy putting in 100's the first run, then 150 the next and then 225 at the last run.

That's a multiple stage system and each one is tunable but they can be expensive. You can't just take any system and make it a multiple system without buying the upgrade kit.

Its pretty easy and cheap to change the shot size, you just have to make sure the kit can deliver it. The Jets, or pills, are what you change, and they just change the size of a hole that the Nitrous and gas have to pass through. The jets go for like 15$ or so.
