You might get several different ideas from responses to your question, but what I have found most beneficial is if you know an upcoming turn is more than you can handle without moving your hands while making the turn, position your hands a little differently right before you turn into the turn.

For instance, if the upcoming turn is to the right, move your hands slightly counter-clockwise on the steering wheel.

If you are already into a turn before you realize how much of a turn it is, I have found it best to "shuffle" my hands. For instance, going into the above mentioned right turn, after the wheel is already turned, slide your left hand to the left, then slide your right hand to the left (rapidly, almost in one motion), and then do the reverse as the turn unwinds.

I don't normally recommend the hand over hand technique.

Thats good advice. Keep in mind that the faster your car goes the slower the hands move. You may have to start turning the wheel a little earlier to make your turn. Also avoid the "death grip" on the wheel. Unless your shifting keep both hands on the wheel. I know this sounds pretty basic, but I see alot of guys running down the straights with a hand on the shifter. Hope this helps.

The steering wheel is for presenting the car to the corner...
The throttle is for driving through the corner.

If you have to input steering after the apex you have done somthing wrong.

Imagine a string tied to the steering wheel @ the 6oclock position on the other side it is attached to the gas pedal. when the wheels are straight the string allows the gas pedal to go to the floor. as you turn the steering wheel it limits the amount of throttle by pulling the gas pedal up.

Just some things to think about.
