Default Power Steering Setups

I am slowly but surely transforming my hatch into an awesome handling machine. Suspension upgrades have been selected and almost all installed. However, I am torn between running a manual rack or keeping the power stuff. I have owned cars with manual steering in the past and the feedback you get from the road just seems so much better. Another reason is the belt drive system I want to use is not power steering pump friendly. This car will occasionally be driven to work, races, shows...etc.
I am looking into Latemodel Resto's 15.1 ratio manual rack kit. Since there are experienced racers on this board, what are the disadvantages to running this setup? Who prefers it?

no manual for me on a road race car. I burnt my power steering up last time I was on the track. I went with a 03 cobra rack and had Jeff Howe mod it. Then bought this pump , reservoir ,cooler and filter. Used all SS lines with AN fittings. If you don't know who he is check out his site he is the number one guy in off road trucks and stock cars. And road racing is far easier on steering than desert racing in a truck. When he nods the rack he can change the feel, also can change the flow at the pump. The set up I got cost with buying the rack from ford around $1500

i have heard that the power steering set up for this machine is not that smooth...it is true....
