Default Painting underside parts and inside doors

I'm restoring a 69 convertible and, at this point, have all "bolted" body parts removed. I'm going to take the parts to a chemical stripping place who'll dip them and remove all paint and any rust on them. Once I get them back I'll do any necessary welding/repairing to damaged/rusted portions and straighten anything necessary. I'm going to have the car professionally painted when I'm finished, but it will be put back together at that point. My question is what I should do to paint the underside/backside/inside of parts like the fenders, doors, backside of valances etc? I plan on detailing the engine compartment myself as well so I thought that it would make sense to paint some of the areas that that painters aren't going to touch once the car is assembled.

This is my first restoration, so please feel free to call me an idiot and give me the details on a better approach.

Also, how do you paint inside the door panels effectively?

Also make sure you check every corner for RUST, and use rust inhibitor to eliminate any future problems.
Some pieces might have to go and be replaced, or repaired.

Fortunately for me this is a West coast car that I had shipped to Indy. Rust is limited but there definitely is some. I have some inhibitor from rustdoctor.com that I am using for problem areas. Except for the trunk and quarters everything else will be chemical dipped so all rust will get eaten away. Is primer going to be enough for areas like under fenders and inside door panels to protect the metal? I would think that some type of finish coat should go on. I'm not expecting the painter to cover those areas.

You might want to use some undercoat products for the fenders and inner doors. EastWood and Dupont have exceptional quality products in that area.

Eastwood, has a rubberized compound that is flexible and will provide some extra sound insulation, this will be ok for the fenders.

If you want "more show" you can use a one stage paint, such as Dupont CHROMAONE, that with a coat of a good urethane primer such as Dupont's is URO Prime. This will be more suitable for the doors or on other places that are not exposed to rain/sun excesive moisture like the trunk.
