Not sure you can.. I tried to remove some off of some 01 seats, and we could not figure it out. Hopefully we can get someone on here to give us a better answer.

i once removed the head rests out of a 86 gt. the head rest "post" (the part that slides into the seat) had a notch,or trough, running all the way down the back of it. i simply got a piece of long thin metal and slid it down the notch into the seat until i hit the lock. its done like using a "jimmy stick" (you know, the tool used to open locked doors). the piece that locked it in place was just a metal ball that sat into the head rest post. im not sure if its the same on the newer cars, if it wasnt so late right now id check my 98 cobra. but i hope this helps. may i ask why you want to take it out? to get something stitched in it? when i did mine (years ago) i took out the stock ones from my 89 notch and put it some that i took out of some 86gt seats i had laying around.

I thought the covers might fit or look better, and it would allow me to adjust them up as necessary. Not that it matters much. By the time my head hits them, I'm looking up at the roof. They don't seem like they would be too effective in a crash. I wonder if anyone got hurt because of that.

It sounds like it. I read an article somewhere(maybe MM&FF) and they reached up through the seat cover and pushed on some release mechanism to release the head rest.
