You are not seeing enough air flow to peg a stock maf so its not restricting anything for you, when you see enough air flow to peg a stock maf you upgrade to a bigger maf...

yea cuz they have tuners. putting a tuner thru yer car for a turbo setup does the same thing as unplugging yer maf! show me one stang that hasnt had a tuner used with a turbo that has a maf on it.
Well there is only ONE way to prove it, VIDEO IT. You have a camera cause you took a video of your exhaust, so don't say you can't take a video. Unplug your MAF and video tape you doing it and then i will believe you. Until then, you are just a freakin idiot.

The tuner and custom program changes the scaling on the MAF and recalibrates it so it reads the airflow more accuratly. Unplugging it does the same thing?

removing the MAF is a great idea.
and while you're at it, remove the CKP, the TPS, the ECT, CMP, and whetever other "useless garbage" that comes factory on every single EFI car.
