I want to boost the hp on my '02 V6 and I'm going to start with a cold air intake and a performance dual exhaust. What are some recommended brands and how much horsepower would they add?
If I were you, I would change the intake manifold, and add under drive pulleys.
You should net at least 10 to 15 hp more for the same cost as the other mods.
A total of close to 30 hp vs 15 hp.

A set of underdrive pulleys and belt will cost about $140. Installation is extra of course, unless you know how to do it yourself.
The pulleys will give about the same HP gain as the exhaust, 8 - 15 and will also increase your MPG.
A good exhaust would be a 40 series Flowmaster, but it all depends on what you like. Flowmasters have a distinct sound as well as the others, but it's which sound do you like.
If you do get the exhaust and dual it out, don't go higher than 2.5 in diameter pipes. Everything I've heard/been told is that bigger will decrease the HP, due to too much exhaust flow. Get an X-pipe also, it will sound better and some say increases performance, a debateable subject.

With the CAI, get a plastic tube, because the metal ones will get hotter and heat up faster than the plastic. Doesn't really do a lot of good to throw hot air into the engine, you lose the performance gain you though it would have.
You want cold/desnse air in the cylinders to produce more HP.
