Really I'm just trying to make a guideline as to what needs to happen first so I don't start trying to swap too many things at once and wind up overwhelmed with two cars that aren't running...

you're not going to have to change the steering column, but you will have to remove a lot of panels to swap out the computer and all the wiring and the instrument cluster and all the wiring there.
You'll have to swap out the brakes, the
tranny, the rear end, the engine, the fuel pump, sway bars, etc., and you'll probably want to swap out the seats, and while your at it the rear quarter windows & panels.
A pro shop would take a couple of weeks. You're basically rebuilding the entire car.
(While you have the thing apart, though, you may want to swap to a heim joint on the steering column, just to take out the play).
