hi and welcome! Very nice classic you've got there.
I work at a Classic Mustang Restoration shop in my town. And I must say with your car, if you want more power out of it the best way is to just swap out the motor, it's relatively easy and fun to do if you have an engine hoist you can rent/own at your disposal. We've done a complete engine swap in a day (that's including the engine, transmission and rear end because the i-6 driveline and suspension can't handle v8).
If you were to do an engine swap the 289, 302, or 351W are the best. The 351C had problems with overheating over extended periods of time, so stay away from that. You would also have to replace the rear-end, transmission, and suspension if you were to do that. All in all, if you've got about $5000-$10000 you could do it. Would be a fun little project
If you just want a nice car to cruise around in, the 6 is good to go then, I'd just recommend doing some cosmetic upgrades to make it a little bit nicer and possibly a good exhaust system.
The v8's were meant to be modified, thus all of the modifications that occurred when these cars came out, the 6 cyl, was used as a cruiser more than anything else so aftermarket parts are minimal other than cosmetically.
