Question Aftermarket gauges installed indash

Problem with my idiot gauges besides besides being there for looks. When I turn on the fan the temp and oil pressure rise quickly and temp maxes out in seconds. it is not overheating.

So why not install some AM gauges. but I do not want the trio rack, and trying to avoid the window frame. A universal trio window frame mount is about $30 and bulky and does not face the gauges correctly and one that is made for my 86 mustang is pricy. So I would like to replace the indash ones with some aftermarket gauges. And altogether avoid the double gauges thing.
As for the temp sensor do I disguard the connection or is it needed for the computer? 86 TBI

Has anyone done this and could give some advice on what to watch out for or would it be completely too much trouble.
