If you wanted to put a 5.0 in a 3.8 Mustang, probably better off starting with an SN95 and robbing parts from a 94-95 GT. Better yet, just buy the 94-95 GT to begin with.
As far as carbs go, there are several intakes that allow you to run a carb on a 5.0, loads of drag-race types run 'em.
If you're sticking with a 3.8 and want to use a carb, Tom Morana Racing makes an intake to do just that. Intake comes in split and single port versions.

While I am almost surprised they do make this, it is still far above and beyond the skills of the OP to even install a stock intake.
