Whether or not the tires will rub depends on the tire as much as the wheel. Overall height is the combination of the wheel size (ie, 17-20") and the wheel size (expressed metric numbers like 40, 35, 30, 25, 20 series, ie, 295/35 ZR18) as the wheel size goes up, the series size goes down, keeping the overall height of the combination close to the stock numbers.
Tires that have wide, rounded sidewalls will VARY in physical width, even though the are rated the same metric width (contact patch will be close to the rated width, ie, 295, but the overall width of the tire might be a lot wider due to protruding sidewalls). Tires with very square shoulders will fit easier and will not protrude much from the wheels.
