Like others have said, I would just use the factory oil. That's what our Shelby uses and it runs completely fine.
It looks like everyone has beaten me to it when it comes to answers. Like they said, I wouldn't get cams. Cams cost a lot with very little gain. First modifications that I would do are a tune and a cold air intake. Most people that own Shelby's have a JLT cold air intake, however for the 5.0 I also heard great things about brands such as Airaid. When it comes to tuning, I would say most people on this forum have a Bama tune. However, other tuners like Brenspeed, Jon Lund and VMP are great as well.
For suspension, to start off a good set of lower control arms would help with things like wheel hop. J&M seem to be a popular brand when it comes to LCA's.
I'm in the Middle East too, and you do not need new brakes. I don't know any cars that have had to need new brakes to suit this climate.
Headers on these cars aren't really worth it until you get into FI. (forced induction, superchargers and turbos) I highly doubt they will get you 30hp.
