I drive a 2014 manual v6. I have the option to change the steering feel in the center menu. According to the manual, I should double press the traction control button for sport mode. But that does not work; I have to hold the button for 5-7 seconds and then this locks the steering in sport mode. What does this change aside from the steering feel? And why does this not match up with what the manual says?
There are four modes for the car. First one is when you turn the car on. Traction control and advance trac is on. If you push the traction once, it turns off the traction only. This mode will allow burn outs but still has the advance trac on so it will engage to help with a spin/car rotating in corner. Sport mode is engaged when you first start the car, foot on the brake and tap the traction control button twice very quickly. The display will say sport mode. This water downs both the advance trac and traction control so you can get more slip angle in a corner and it will allow the rear to spin more then normal. Next is everything off which is down by foot on the brake this whole time, press and hold traction control button for 6-8 seconds (until the display says advance trac off). This is advance trac and traction completely off. I believe if you steer is in normal mode when you go to sport mode the steer effort increases. I put my car in sport mode when I drive and when I go to a road course. For autocross I turn everything off. My car is a weekend car though, for the most part I would just keep everything on.
Actually, you can put the traction control in sport mode anytime you step on the brake. It doesnt have to be at start up. Red light. Stop sign. Slowing down with foot on brake. I don't know if this is advisable, but it does work.

This is accessed by pressing the traction control button twice with the brake pressed. What you seem to be looking for is just the steering feel, which is accessed by pressing the settings button on the dash until steering mode (or something like that) is shown, then choosing between comfort, standard and sport.
What you're doing by holding the button down is probably turning all traction and stability off, does it say advance trac off when you do this?
Edit: I re read the OP, I missed the bit about being able to change steering feel the first time I read it.
If sport mode is available on all models, then I'm not sure why it isn't working with the double tap.

sport mode isn't just offered on the brembo package. I have a base model with sync and can put it in sport mode. all you do is foot on brake and double tap traction button as described
I'm not sure anyone has answered OPs question clearly enough. His post is confusing two different functions in the car.
To control the steering wheel feel, you make the adjustment using the screen between the mph and rpm gauges on the dash behind the steering wheel. You can adjust it through the buttons located on the steering wheel.
To change the traction control and other computer-assisted driving options (the things that keep you in the road if the car starts going sideways), you use the button located on the center console beside the shifter. As others have noted in this thread, holding the brake and pushing it once, twice or holding it will result in more controlled assistance being turned off.
