It'll run cold for a time, but then it'll seem to get hot all of a sudden. The coolant is in constant circulation, but it needs to be kept in the radiator long enough for the air to cool it down before it goes back into the engine. Result will be, the entire system will eventually get hot.
He needs to put one back in there. It'll work without one until they can get a new one installed, it won't hurt, but it's not a good idea to take it out and forget about putting one back in.
