first off, deleting cats make it raspier, and you wouldn't have to delete them to change to an x or h pipe
it depends on how far apart the pipes are now most h-pipes are about 8 inches or so in between, the closer they are together the more it will sound like an x-pipe, i honestly don't see why you couldn't just put a peice in between there as long as the stuff is grooved right to fit around pipe and the holes cut out for the cross-over are cleaned out to the same size as bridging pipe
oh, whenever you get this done (whether it be a handmade or bought h-pipe) post up a video so we can hear it please
