Car sounding and running like hell! 1999 Mustang GT

When i started my car this morning (recently rebuilt 4.6 with CAI, and exhaust), it was running like crap. No power and sounds far more throaty than usual. My check engine light has been on since the exhaust went on and it says bank one O2 sensors are f'ed up. The whole car is shaking a little when i'm sitting still, and my gas mileage has gone from 22 to about 6-8. Any ideas??

BBK long tube headers, BBK X pipe catted, and SLP loudmouth 2 exhaust. I think it might be my MAF, but i really havent had it looked at yet. I only drive it about 10 miles a week, so its not a super issue right now. I would like to figure out what it is and fix it on my own though. My other thought would be a loose or bad spark plug wire, but i can only reach to check 6 of them because of my CAI .

A couple coil over plugs could be shot... Do you have a ohm meter to test them?
