Best tire and wheel size for 19"?

I am looking into 19" STR 607 wheels with a front 19x8.5 and rear 19x10. I was thinking about putting on 245/35/19 front and 275/30/19 back which still allows me to stay within 3% of speed envelope in -/+ field. My car is lowered an inch. I know that 285/295 etc are considered as wide tires, but would those fit on my car? Also in front can 255's be an option? I have a spacer right now in my back wheels, but I guess I can take it off once I have my new wheels ready? Thanks!

While those bigger sizes will fit, I think your first picks are dead on. 275 on a 10" wheel is great.

I wouldn't go with 19's, on any car really, but especially on a pre 05 Mustang. Too big for the car, and tire availability is dismal for 19's you'll have little selection and higher prices.
