My AC just blows hot when you accelerate hard..... apparently this is normal according to the dealer.
Yes, that's a fact. The clutch disengages at WOT, thus producing less drag on the engine. My Crown Vic did that too.
As per my Technical Specialist (and jsimmons) there are quite a few things that will make the compressor cut off because it assumes you need the power elsewhere. Some are normal characteristics to make sure it does not burn out and some that could be concerns. You’re more than welcome to get a second opinion at a different Ford Dealer.
